Happy, happy Wednesday. How are you? How has winter been treating you? For many of us, winter can be a trying time of year. It’s cold. And dark. And depending on where you live, maybe the sky is a recurring shade of grey. Thankfully, winter in Denver is fairly mild, and there seems to be plenty of hygge to go around. Regardless, I find myself in a constant state of flux during this season. I teeter between the simple joys of staying in my cozies, savoring a bowl of leftover butternut squash soup and watching blanketing snow fall — all the while, anxiously awaiting the first signs of spring. Like clockwork, I find myself grasping to every sunshine-filled, warm day in February.
Thankfully, March is right around the corner. Which means April isn’t out of reach. And May? Totally within sight. So, until the cherry blossoms bloom and I can put away my Sorels, I’ll be here wearing wool socks and sitting on the couch — right where the sun likes to drape our cushions. Anyway, I realize that I’ve totally neglected this tiny corner of the web. It’s been a month since I last posted, but here we are. And although you probably didn’t notice my absence (unless you’re my dad), my goal is to carve out more time for this space. So, let’s start by briefly recapping Presidents’ Day weekend.
Friends in tow, we spent the long weekend in Utah — skiing, snowshoeing, sledding, eating flourless chocolate cake, drinking wine, and telling stories around the kitchen table. It was really peaceful. The pictures and videos speak for themselves, but we truly had the best time. I want to give a huge thank you to my husband’s aunt and uncle. After all, they housed us, fed us, and let us play in the snow with the toys they conventionally keep for their grandchildren. Although my husband drove (he kindly schlepped all of our snow / ski gear from Denver), Jerad, Alexa, and I flew. As soon as we landed in Salt Lake City, my husband scooped us up from the airport. We grabbed groceries for the weekend, then made our way to Snowbasin. That evening, we sled until the sun went down, refueling afterward with wood-fired pizza and a mango and black bean quinoa salad.
Monday morning, we woke up early and drove to Park City (about an hour or so from Snowbasin). While the crew skied, I worked from Atticus Coffee & Teahouse. I took a mid-day bootcamp class with a girlfriend who lives in the area, then we re-grouped and explored downtown Park City. We made a pit-stop at Windy Ridge Bakery and Fairweather Natural Foods for treats as well as Flight Clothing Boutique to defrost. We lounged the rest of the afternoon, then had sous-vide steaks, baked sweet potatoes, and salad for dinner. Followed by the most decadent chocolate cake and coconut ice cream for dessert. My kind of nightcap.
Tuesday, Alexa and I stayed inside and worked, then spent the early afternoon snowshoeing around the neighborhood. We loved it. And now I want my own pair of snowshoes. 😉 Once the boys returned from skiing, we relaxed, ate snacks, then dug into creamy apple and cauliflower soup, sweet potato mash, roasted veggies, and salad. And more cake and chocolate, of course. While the trip was short, it was the perfect blend of togetherness, outdoor adventures, and solidifying that I really shouldn’t give winter such a bad rap.
