Nothing says winter in Denver quite like yesterday: a few hours of heavy, thick snowfall (the kind for playing, not driving), followed by bluebird skies and welcomed sunshine. Although I’m a California girl at heart, I love living in the Rockies. Mother Nature does it best up here.
I was hoping to kick-off a regular blogging schedule in 2019, but it’s been a few weeks since my last blog post. Oops. We’ll try again in February. At any rate, hi. Hello! If you’re new around here, welcome. My name is Edie. Over on the ‘gram, I chat mainly about body positivity and the importance of having a practical — not obsessive — approach to wellness. I’m cognizant of how much time I spend on social media, and I try to encourage others to follow suit. After all, there is so much life happening beyond those little squares. For work, I do a bit of everything: health coaching, operations, and freelance writing. In between emails, I enjoy cooking, taking photos, and eating all the things. The kitchen is my happy place, and this blog is a reflection of that. But truthfully, the last few weeks have felt quite hurried. I’m officially knee-deep in an endless game of catch up. Anyone else? I’m not sure if it’s a generational thing or what, but taking on more, more, more seems to be the norm. More responsibilities! More tasks! More side hustles! More hobbies! And when you fall victim to all of that, those exclamation marks become indicative of your cortisol levels. 😉
So, let’s slow down and take a few deep breaths together. Let’s commit to the notion of less is more. And we can support each other along the way. Less doing, more being. Less work, more play. Less stress, more gratitude. Less kale, more bread and olive oil. Because honestly, who doesn’t love bread and olive oil? Speaking of olive oil, I have a new recipe for you today. It includes a few of my favorite healthy fats, but the toasted pistachios are the star of the show. Hop over to my Instagram to grab the recipe. I had a similar dish at Barcelona Wine Bar over the weekend, and I had to re-create it home. It’s so YUM. Until we talk next, I’ll be sending zen, peaceful vibes your way.
