It’s officially springtime in the Rockies — hallelujah. The change of seasons has me craving colorful, nutrient-dense salads, fresh berries, ice cream, and all the sunshine.
Hey, friends! Happy start to December 🙂 I’m a little behind here (seeing that today’s already the 5th), but let’s just roll with it.
Alright, alright! It’s the end of the month. August flew by, and fall is right around the corner. So, no better time than the present to show you a few eats. This gluten-free, protein-packed, vegetarian pasta salad is a nutritious and colorful accompaniment to any potluck, BBQ, or weeknight meal. I added chopped herbs and lemon juice to keep it light and fresh, but it’s also hearty and satisfying thanks to the lentil pasta, garbanzo beans, and sun-dried tomatoes.

First and foremost, I have a life to live! Second, I would already have 3k photos posted to my account—I love to eat, and I eat all of the time.
