Happy Wednesday, friends! I hope you had a relaxing weekend (Super Bowl and all). I was in the Bay Area over the weekend, celebrating a friend’s baby shower, getting work done, and spending quality time with my parents.
Happy Monday, friends. And happy start to a brand new week. Last week was rough. I’m still feeling immense heartbreak for those who lost a little (or a lot) in the California wildfires. My sister lives in Napa, so this natural disaster hit terribly close to home. She’s fine, as is her apartment, but many, many others weren’t as lucky.
For those of you looking to incorporate more veggies into your daily eats, this pasta is for you. It’s light yet satiating and chock-full of fiber, protein, vitamins, and minerals. And, most of the ingredients are from a box or can. That’s right. Convenience and budget-friendly staples are key.
Welp. It’s now October 4th, which means I’m a bit delayed in rounding up September’s eats. Whoops! Thus is life, though. Things slip through the cracks. And that’s okay. Realistically, so long as I am making time for my top priorities, everything else is secondary. As it should be.
Happy Sunday, friends. This weekend was filled with delicious food, plenty of ice cream, time with friends, watching the Colorado Classic, exercise, and a nap. It was busy and productive, and I feel prepped for the week ahead. That said, I’m certainly counting my blessings. It’s been a tough weekend for many Americans. From my small corner of the world, I’m sending love and hope to those who need it. May we continue to peacefully fight for the equality of all people, both here in the U.S. and around the world.
