For those of you looking to incorporate more veggies into your daily eats, this pasta is for you. It’s light yet satiating and chock-full of fiber, protein, vitamins, and minerals. And, most of the ingredients are from a box or can. That’s right. Convenience and budget-friendly staples are key.
Welp. It’s now October 4th, which means I’m a bit delayed in rounding up September’s eats. Whoops! Thus is life, though. Things slip through the cracks. And that’s okay. Realistically, so long as I am making time for my top priorities, everything else is secondary. As it should be.
There’s nothing quite as satisfying as a bowl of creamy butternut squash soup, right? Especially after a long, chilly day. And for me, there’s nothing quite as satisfying as walking into my cozy kitchen, knowing that regardless of the work day I’ve had, the kitchen is my happy place.
If I were to ask you where you show up in your life, what would you say? Do you show up for books or people or yoga classes or cooking? For leisurely brunches or a beer after work? Do you make time for meditation or naps or podcasts or travel? Think about this question for a second. Where do you show up in your life?
Ever since I noshed on hearty falafels, creamy tzatziki, warm pita bread, and nutty tahini in Helsinki (recap post coming soon!), I’ve been craving Mediterranean food. But, let’s be honest. I crave Mediterranean food most days of the week.
The night before we left for Finland, we packed a picnic (ahem, picked up a few items from Whole Foods), and headed to the Denver Botanic Gardens to watch the Gipsy Kings. We chatted with the strangers sitting next to us, snacked on the food we brought, and enjoyed the beautiful late-summer evening.
Alright, alright! It’s the end of the month. August flew by, and fall is right around the corner. So, no better time than the present to show you a few eats. August was pretty standard as far as food goes. Eggs for days. Plenty of ice cream. Lots of salads. Some pizza. Enough almond butter to feed a family of five (and I’m the only AB connoisseur in the household).
And just like that, it’s the end of August. Luckily in Colorado, we still have plenty of sun-drenched afternoons and warm weather ahead of us. But still. Where does the time go? I’m currently sitting at my desk, thinking about all of the places and activities I planned to see and do this summer.

Happy Sunday, friends. This weekend was filled with delicious food, plenty of ice cream, time with friends, watching the Colorado Classic, exercise, and a nap. It was busy and productive, and I feel prepped for the week ahead. That said, I’m certainly counting my blessings. It’s been a tough weekend for many Americans. From my small corner of the world, I’m sending love and hope to those who need it. May we continue to peacefully fight for the equality of all people, both here in the U.S. and around the world.
